Opening a second location? Fix these three things first

Your first location runs on you

That's not a criticism. It's just what happens. You know which supplier to call, which prep list is out of date, and which fridge needs a shove. None of that is written down because it never needed to be.

1. Write the procedures before you need them

Opening checklists, closing checklists, temperature logs, prep lists by day. If a new manager can't run a shift from the documentation alone, it isn't documentation yet.

2. Lock your recipes

Costed, portioned, with a photo. The second site will drift from the first within a fortnight if the recipe lives in someone's head.

3. Get ordering out of the group chat

One place to raise orders, one place invoices land, one view of what each site is spending. You'll want to compare the two sites by week three. Make that possible from day one.
